Nanny’s Savory Zucchini Bread

Hey Y’all! Since zucchini is in season, I thought I would share a family recipe passed down to me by Farmer J’s grandmother. This is not a sweet zucchini bread but rather savory. I like to make it on evenings that we eat spaghetti or as a snack with a sliced up tomato fresh out of the garden. During the summer, I like to grate extra zucchini from the farm and freeze it into proportioned servings so we can continue to have zucchini bread year round. The girls love it so much and we are so thankful this recipe was passed down to us!


Ingredients:

3 cups grated or thinly sliced zucchini

1 cup all purpose flour

1/2 cup Parmesan cheese

4 eggs slightly beaten

1/2 cup canola oil

1/2 cup finely chopped onion

1 clove of garlic finely chopped

2 tbs parsley

1/2 tsp salt

1/2 tsp seasoned salt

1/2 tsp oregano

1 dash of pepper to taste


Mix all ingredients in a bowl and then pour into a large baking pan. Bake at 350 degrees for 25 minutes or until golden brown on top.
